This tater tot breakfast casserole is a favorite with sausage, cheese, eggs and crispy tots. This make ahead breakfast is easy to make and always earns rave reviews!

Ingredients
½poundbreakfast sausage
2Tablespoonssalted butter
½cupchopped onion
1cupchopped bell peppers
8large eggs
⅓cupmilk
1teaspoonKosher salt
¼teaspoonground black pepper
1/2-1cupshredded cheddar cheese
28ouncesfrozen tater tots
For serving: Sliced green onions, Hot sauce
Instructions
Preheat the oven to 350°F. Butter a 9×9-inch baking dish or cast iron skillet.
Brown sausage. In a skillet, cook 1/2 pound sausage over medium heat until cooked through. Remove to a paper towel-lined plate.
Saute veggies. Add 2 Tablespoons butter, 1/2 cup onion, and 1 cup bell peppers to the skillet. Cook 3 minutes, or until tender. Stir in the sausage.
Transfer mixture to the baking dish. Place in the refrigerator to cool slightly,
In a large bowl, whisk 8 eggs, 1/3 cup milk, 1 teaspoon salt, and 1/4 teaspoon pepper. Pour over the sausage mixture.
Sprinkle with 1 cup cheese and line the tater tots evenly over the top.
Bake 40 minutes, or until the eggs have set and a toothpick inserted into the center comes clean. Let stand 5 minutes before serving.
Notes
Make ahead: This dish can be made up to 24 hours in advance. Simply cover and refrigerate before baking. This also makes a great dish to bake and serve throughout the week. Once baked, store leftovers for up to 4 days. Variations:
Meat: You could substitute sausage with ground turkey, Italian sausage, diced ham, or bacon.
Vegetables: Feel free to add in any vegetables you'd like. Some of my favorites are mushrooms, spinach, chopped asparagus, or broccoli.
