Total Time: 15 minutesminutes
Servings: 18
Ingredients
10-13cupspopcorn, lightly salted (I used Skinny Pop to make it easier)
Optional: 1/2 tsp vanilla, flake sea salt, extra marshmallows or chocolate chips
Instructions
Pour 10-13 cups popcorn and 3 cups golden grahams into a large bowl.
In a medium-sized pot, melt 1 cup butter and most of the marshmallows (reserve 1- 2 cups) over medium-low heat. Once the butter is melted, stir in 1/3 cup brown sugar until it is dissolved (only about 1 minute). Stir in the reserved marshmallows once you remove from heat (you don't want them to melt completely). Stir in 1/2 teaspoon vanilla if desired.
Pour mixture over the bowl of popcorn. Stir until the popcorn is completely coated. Add more popcorn or golden grahams until desired texture is reached.
Then spread out onto a piece of parchment paper or wax paper. Sprinkle extra marshmallows or chocolate chips on top if desired. Then drizzle 1/2 cup - 1 cup melted chocolate over the top and allow to cool.
Notes
Butter: If your popcorn is not salted, use salted butter. If the popcorn is salted, I would use unsalted, unless you don't mind the extra salt. You can always add flaked sea salt at the end if you'd like more salt. Chocolate: You can also use milk chocolate if you prefer. Instead of melting the chocolate and drizzling on top, you can also mix in the chocolate chips while it's still warm and it will start to melt around the popcorn. Tips for how to melt chocolate.Variation: Another fun variation of s'mores popcorn is to add mini marshmallows, Hershey Kisses, nuts and pretzels. Add as much as your heart desires.Cutting recipe in half: This recipe is super easy to cut in half for a smaller crowd. I typically will do 7 to 8 cups popcorn, 1 1/2 cup golden grahams. 1/2 cup butter, 8 oz marshmallows and 2-3 Tablespoons of brown sugar.Storage: Store in an airtight container or ziplock bag. Best served fresh, or within the next 2-3 days.
