Lemon coconut energy balls are a healthy, guilt-free, no bake snack with dates, nuts, coconut, chia seeds and lemon juice. No refined sugar plus paleo and Whole30 approved!

Ingredients
1cuppitted dates
2lemons, juiced
¼cupraw almonds
¼cupmacadamia nuts, cashews or walnuts work great too
½cupshredded coconut, more if needed for rolling
1Tablespoonchia seeds
Instructions
Line a 9×13 pan with wax paper and set aside.
In a food processor or high powered blender, chop the nuts. Remove nuts and then add in 1/2 cup dates with the juice of 1 lemon and pulse. Add in the remaining dates and the juice of the 2nd lemon and pulse. Then add in chopped nuts, chia seeds and half of the shredded coconut. Mix until all the ingredients are combined.
Roll into 1-inch balls (approximately 1 1/2 Tablespoons) and then roll into the remaining shredded coconut (may need more for rolling). Keep stored in the refrigerator.
Notes
You can use different nuts to make various combos, just keep the dates as the base.
If the mixture becomes too dry, add in a little bit more lemon juice or water.
If they are a little sticky, place them in the freezer for a bit to harden up.
To store: Keep in fridge in an airtight container or bag for up to 1 week.To freeze: Place in a freezer bag or airtight container and store in freezer for up to 3 months.
