These cake mix chocolate mint cookies are soft chocolate cookies loaded with mint chips. If you love the combination of chocolate and mint, these are so easy to make!

Ingredients
½cupbutter, softened
8ouncepackage cream cheese, softened
1egg
½teaspoonpeppermint extract
1boxDevil's Food cake mix
1cupmint chips
Instructions
Preheat oven to 350°F. Line a baking sheet with a silicone mat or parchment paper and set aside.
In a large bowl, cream 1/2 cup butter and 8 ounces of cream cheese until smooth. Mix in one egg and 1/2 teaspoon peppermint extract and stir until combined. Add cake mix and stir until smooth. Then fold in the mint chips. Refrigerate the cookie dough for 20 minutes.
Once chilled, roll the dough into 1 1/2 inch balls and place on the baking sheet. Add a few more mint chips on top if desired.
Bake for 11-13 minutes. Allow to cool on pan for a few minutes and then remove to cooling rack. The centers will harden as they cool. You want them to be soft.
Notes
Note: You may substitute the mint chips with 1 cup mint M&M's if preferred. Storing: Store in a covered container for up to 3 days.Freezing: Flash freeze the cookies on a baking sheet for about 30 minutes (or until hard). Then transfer to freezer bag and store for up to 3 months.
