Easiest Strawberry Cake Mix Cookies Recipe

If you’ve never made cake mix cookies before, you must give them a try! They’re delicious and perfect for when you need to make something easy and fast. This strawberry cake mix cookie variations is perfect for celebrating Valentine’s Day!

These strawberry cake cookies start with a cake mix and are finished with an optional white chocolate dip. You could also add a strawberry glaze like I do in my strawberry cream cheese cookies or turn them into bar cookies from a cake mix!

  • Strawberry cake mix: I used Duncan Hines Perfectly Moist, but Pillsbury, a Strawberry Funfetti Cake Mix or even Betty Crocker can be used.
  • Oil: Vegetable oil is what I used, but melted butter can be used.
  • Eggs: 2 large eggs at room temperature.

How to Make Cake Mix Strawberry Cookies

Stir the cake mix, oil, and eggs together until combined. The dough is sticky, so I like to refrigerate it for 15-20 minutes if I have the time. It makes it easier to work with once it’s chilled.

Scoop the dough onto a lined baking sheet, then bake at 350°F for 9 to 11 minutes until the cookies are set (but not brown).

Let them sit on the pan for a couple of minutes, then move them to a cooling rack. If dipping into white chocolate, wait until the strawberry cake cookies are completely cooled.

Tips and Variations

These strawberry cake mix cookie recipe have a great base to start with but you can have fun with these variations!

  • The white chocolate is optional – you could leave it off if preferred.
  • I used white melting wafers for dipping, but white chocolate chips work great too. The chips also taste great folded into the dough.
  • You could even use milk or dark chocolate instead of white.
  • To make it sweeter, roll the dough balls into granulated sugar or powdered sugar before baking.
  • A classic buttercream and sprinkles would taste great on top of these cake mix strawberry cookies as well.

Why is my cookie dough so sticky?

Cake mix cookie dough is sticky. If you find it too sticky, trying chilling the dough for at least 30 minutes.

How to know when the cookies are done baking?

Strawberry cake mix cookies are done when they lose their glossy sheen on the top and look more matte. Don’t over bake the cookies! They will continue to cook on the baking pan after removing from the oven.

How to store strawberry cake mix cookies?

To store, simply add to an airtight container or bag and keep at room temp for up to 1 week. You can even freeze the cookies if you’d like. Just let them cool completely, then place in a freezer bag and freeze for up to 2 months.

Ingredients 

  • 15.25 ounce box strawberry cake mix
  • ½ scant cup vegetable oil , or 7 TB melted butter
  • 2 large eggs
  • white chocolate melting wafers , optional
  • Heart sprinkles , optional

Instructions

  • Preheat oven to 350°F. Line a baking sheet with a silicone mat or parchment paper and set aside. Combine the cake mix, oil and eggs in a large bowl. Stir together until combined. If you have the time, refrigerate the dough for 15-20 minutes (it will make it a little easier to work with, since it is sticky).
  • Using a medium scoop or spoon, scoop the dough onto the prepared baking mat. Bake for 9-11 minutes, or until the cookies are set. You don’t want them to brown. Allow to cool on the pan for a couple minutes and then transfer to a cooling rack.
  • If desired, melt 1/2 cup chocolate and then dip half the cookie into the chocolate. Lay cookies onto a wax paper and add sprinkles if desired.

Notes

More strawberry flavor: Mix in 1/4-1/2 cup chopped freeze dried strawberries. 
Variation: You may also mix in a 1/2 cup white chocolate chips if you’d prefer. For a sweet touch, roll the dough balls into granulated sugar before baking.
