No-Bake Oatmeal Peanut Butter Cookies
These no-bake peanut butter oatmeal cookies are so easy to make and only take 10 minutes to prep. They are a classic cookie that is chewy and full of peanut butter flavor.
These no bake peanut butter oatmeal cookies were a big hit with my family and were gone so fast! Next time I am going to double the batch and stick half in the freezer so that we’re always stocked. Just like my peanut butter m&m cookies, haystacks recipe and no bake peanut butter bars they are the perfect grab-and-go sweet treat.
Recipe Ingredients
The best thing about these no-bake peanut butter cookies are that the ingredients are so simple. You most likely already have these pantry staples!
- Peanut butter: The creamy type works best.
- Quick-cooking oats: Make sure to use quick 1-minute oats. Old fashioned rolled oats won’t work in this recipe because they’ll be hard and crunchy.
- Sugar: Granulated sugar gives the cookies the perfect amount of sweetness.
- Butter: This butter adds a delicious, rich flavor.
- Milk: I typically use whole milk.
- Vanilla: Adding a dash of vanilla takes the flavor up a notch.
How to Make No-Bake Peanut Butter Oatmeal Cookies
- Prep. Line two baking sheets with parchment paper or wax paper and set aside.
- Boil. In a saucepan over medium heat, combine sugar, butter and milk and bring to a boil. Boil mixture for 2 minutes, constantly stirring.
- Mix. Remove pan from heat and mix in peanut butter and vanilla. Then add instant oats and mix until well coated.
- Set. Drop batter by the spoonful onto the prepared baking sheet. Let cool until set, about 30 minutes.
Tips and Variations
- Add a drizzle of melted chocolate on top.
- Top with a chocolate kiss, similar to peanut butter blossoms. Once you drop a spoonful of the batter on your baking sheet, just press the chocolate kiss into the cookie immediately. You could also add some chocolate chips.
- After you mix in the oats, fold in 1/2-1 cup Reese’s pieces candy.
- If your cookies aren’t setting, you did not boil the ingredients long enough. A candy thermometer or instant read thermometer should ready 230°F.
- I like to use a cookie scoop to place the peanut butter no bake cookies on the baking sheet. It keeps them uniform in size.
Storing and Freezing
- To store: These no-bake peanut butter oatmeal cookies can be stored at room temperature in an airtight container or bag for 3-4 days. However I personally like to store them in the refrigerator, because it hardens the texture a little and makes them extra chewy. If stored in the fridge, they’ll last up to a week.
- To freeze: Store in an airtight container or bag in the freezer for up to 3 months. If you’re planning on freezing the whole batch, make sure you let the cookies set first before adding them to the container or else they’ll stick together.

I made these for my Mom she wanted them instead of the one with cocoa in them THEY turned out perfectly the taste, texture not to sweet the only thing I did half quick oats and half rice crispies cereal perfect so easy to make and the best part no baking Thanks So Much
I’m so glad she enjoyed them!
I tried this recipe tonight with my 11 year old daughter and the batter consistency was way too thin. We had to add about 2 more cups of oats to get them to actually form into anything other than a liquidy mess. They did taste great after we adjusted the amount of oats needed.
My husband told me that they’re “no good and because he loves me he will eat the entire batch” 🤣 Super easy. I was out of parchment paper and put them in an 8×8 pan and it worked out perfectly.
I’ve used that trick a few times! I’m so glad you enjoyed them!
My daughter is vegan. Just curious if plant milk and butter would work? Thanks!
I haven’t tried it, but I think that would work just fine! :)
Always made the chocolate one ( recipe from my grandmother), the children liked these also . They call them no bake blondies.
Awesome!!! I LOVE this app!! The recipes are delicious and simple. They couldn’t be any easier to read or follow. Thanks a million
I’m so glad you enjoyed them! :)
Can I use rolled Oats.?
That should be fine but it will produce a crunchier cookie!
Easy, fast..awesome consistency. Tastey!!!
I made these for an upcoming family celebration. To keep the recipe non-dairy, I subbed almond milk for regular milk. The cookies are delicious, but if you want to have plumpy cookies over flat ones, it is best to use a cookie scoop. I decided I didn’t want to clean mine afterwards, since I was on a time crunch, and my cookies are flat as pancakes!
I made these with my activity day girls and then another batch just for my family and they were super yummy. Made the family ones super size!
So glad your family loved them! :)
Beautiful no bake delicacy ! Keeper it is !

Yum! Peanut Butter Cookies are my favorite. Can’t wait to try them!
I am allergic to peanut butter, so I make these all the time using WOW Butter, which is basically soy butter. It is a great alternative and tastes identical to peanut butter according to my family!
