Meatloaf Recipe with Onion Soup Mix
Nothing is more cozy than a homemade meatloaf recipe served with a side of creamy mashed potatoes, and this one is easy, flavorful, and just like you remember growing up!

Lipton Onion Soup Meatloaf Recipe Ingredients

- Ground beef: I use lean ground beef, about 80%-90% fat. This helps minimize the excess grease that bubbles up the sides of the meatloaf.
- For binding: Panko breadcrumbs and whisked eggs. The eggs also help to keep the meat moist. Any breadcrumbs will work; I just prefer Panko.
- Beef broth: You can swap this with milk if you prefer. It gets absorbed by the breadcrumbs, adding even more flavor.
- Flavor additions: Finely chopped parsley, Worcestershire sauce, ketchup, salt, and pepper.
- Lipton onion soup mix: Just a packet of the dry mix will do. I use Lipton, but any brand of onion soup mix will do.
- For the glaze: Ketchup or BBQ sauce, or both, and light brown sugar. This is the meatloaf sauce I use most often. Sometimes I’ll add a little Dijon for kick.
How to Make Lipton Onion Soup Meatloaf
Grab a large mixing bowl and add all of the meatloaf ingredients (except the glaze) then mix to combine. Don’t overmix, otherwise your meatloaf will be dry, mix just enough to make sure all ingredients are combined. Use your hands for this!
Once you’ve got your mixture ready, press it into a prepared loaf pan. If you’re using a baking sheet instead, line it with aluminum foil and then transfer the meat mixture onto the pan and shape it into a loaf. Slather the glaze on top and spread it evenly across.
Now, it’s ready to bake! Place it in the oven preheated to 375°F and bake it for 45 minutes. Once done, let it rest to allow the juices to settle before slicing it. Enjoy!
Tips for the Best Meatloaf
- Loaf pan or baking pan? If you want crispier outer edges, use a baking sheet. If you want moist edges, use a loaf pan.
- Test for readiness. The internal temperature of this easy meatloaf recipe will be 160°F once it is ready to come out of the oven.
- Ground beef alternative. This meatloaf recipe with onion soup mix can also be used with ground turkey. You can also combine the ground beef with a bit of ground pork.
- A layer of cheese. If you love my mozzarella stuffed meatloaf, add half ground beef mixture to pan, layer sliced cheese on top, then top with remaining meat mix.

- 2 pounds 80%-90% ground beef
- ½ cup panko breadcrumbs
- ⅓ cup beef broth , or milk
- 2 large eggs , whisked
- 2 Tablespoons finely chopped fresh parsley
- 2 Tablespoons Worcestershire sauce
- 2 Tablespoons ketchup
- 1 teaspoons Kosher salt , or 1/2 teaspoon table salt
- ¼ teaspoon ground black pepper
- 1 packet Lipton onion soup mix , dry
Glaze
- ⅔ cup ketchup or BBQ sauce , you could mix half and half
- 2-3 Tablespoons light brown sugar
Instructions
- Preheat: Preheat the oven to 375°F. Line a baking sheet or 9×5-inch loaf pan with foil. Lightly spray with non-stick spray and set aside.
- Combine: In a large bowl, mix 2 pounds beef, 1/2 cup breadcrumbs, 1/3 cup broth, 2 eggs, 2 Tablespoons parsley, 2 Tablespoons Worcestershire sauce, 2 Tablespoons ketchup, 1 teaspoon kosher salt, 1/4 teaspoon pepper and onion soup mix until just combined. Be careful not to over-mix, or the meat won't be as tender.
- Shape: Press into the loaf pan or form the mixture into a loaf shape on the pan.
- Mix: In a small bowl, mix together the ketchup and/or BBQ sauce and brown sugar. Pour over the top of the meatloaf. Add pepper on top, if desired.
- Cook: Bake in preheated oven for 45 minutes, or until a meat thermometer reaches 160°F. Let rest 10 minutes before cutting into slices.

Keep leftovers stored in an airtight container in the fridge for up to 5 days.
It does, but I would suggest freezing it before baking. Make the meat mixture, form it into a loaf, wrap it tightly in plastic wrap, and place it in a freezer bag. Keep frozen for up to 3 months.
Thaw it in the fridge overnight and then bake as directed. You might need a few extra minutes in the oven as it is going in cold.
One of my family’s favorites when it comes to side dishes for juicy meatloaf is cheesy mashed potatoes. We’ll usually have this with peas, green beans, or glazed carrots.
Meatloaf sandwiches of course! In between some toasted bread, a slice of cheese, and maybe some caramelized onions. So good!
Leftovers can also be reheated as is and enjoyed again for dinner the next day.
