Whole 30 Lemon Energy Balls
I’m always on the hunt for healthy snack ideas that are simple, quick and delicious. These no-bake lemon coconut balls are a top pick and are usually always on hand. They are perfect for meal prep and make a great grab and go snack.
These lemon coconut energy balls are packed full of delicious flavor and are super healthy for you! I loved these when I was doing the Whole30 because they were about the sweetest thing I could have. They’re filled with dates, which are naturally sweet and delicious. Perfect for those who have a sweet tooth but are trying to eat healthier.
They almost taste like a lemon larabar, but better in my opinion. Everything just tastes better with shredded coconut, don’t you think?!

Ingredients
- Dates: Make sure the dates are pitted! You can either do this yourself of buy already pitted dates for convenience.
- Lemon juice: You’ll need the juice from 2 medium-sized lemons.
- Almonds: I like to use raw slivered almonds. Salted nuts tend to make the energy balls a bit too salty.
- Macadamia nuts: Macadamia nuts are my favorite, but cashews or walnuts work great too.
- Shredded coconut: Make sure to buy raw, unsweetened shredded coconut! You could even toast your coconut if you’d like.
- Chia seeds: I love adding these in to sneak in some extra fiber and protein.
How to Make Lemon Coconut Energy Balls

- Line baking sheet. Line a 9×13 pan with wax paper and set aside.
- Blend ingredients together. Chop the nuts in a food processor or high powered blender. Remove the nuts, then add in 1/2 cup dates with the juice of 1 lemon and pulse. Add the remaining dates and juice from the 2nd lemon and pulse again. Then add in the chopped nuts, chia seeds and half of the shredded coconut and mix until combined.
- Roll into balls. Roll into 1-inch balls (about 1 1/2 Tablespoons) and then roll into the remaining shredded coconut (may need more for rolling). Keep stored in the refrigerator.
Tips
- You can use different nuts to make various combos, just keep the dates as the base.
- If the mixture becomes too dry, add in a little bit more lemon juice or water.
- Use a food processor or blender to finely chop all of the ingredients.
- Use a medium cookie scoop to form energy balls so they’re evenly sized.
- If they are a little sticky, place them in the freezer for a bit to harden up.
Storing + Freezing
- To store: Keep in fridge in an airtight container or bag for up to 1 week.
- To freeze: Place in a freezer bag or airtight container and store in freezer for up to 3 months.

i misunderstood the recipes and basically used lemon flesh ..after juicing . It worked beautifully ! I removed all rind and white part !
i just made these, they are very “wet” and I had to put in the freezer to firm up. Are they supposed to be soft or firm? Perhaps next time I will only use one lemon and add as needed.
Hi Sarah! These are supposed to be firm enough to go in a ball, but softer than a granola bar. I would recommend using less lemon next time. Lemons come in different sizes, so you must have used a larger lemon! Hopefully those changes help with the consistency. :)

This is really a great recipe. I just love to taste them. My mom will be asking me to eat some energy balls that are brought from the shop but that really don’t make me feel interesting to eat. But now i have got something yummy and energetic too. My mom really feels happy when i do taste this. It is just amazing and super cool. Lemon is my favorite flavor and that enhance the taste of this recipe. Loved it totally. I am gonna try this for sure!!!!!!!!!
