How to Make Cottage Cheese Queso
In a skillet over medium heat, cook ground beef, chopped onion, and green chiles. Drain any grease and stir in taco seasoning with garlic powder, salt and pepper.
In a blender or food processor, combine cottage cheese, shredded cheese blend, and water. Blend on high until smooth, scraping down the sides if needed.
Pour cheese mixture into a microwave safe bowl and cook in the microwave for 2-3 minutes, stirring every 30 seconds. Add cooked ground beef to the cottage cheese mixture, combine, then season high protein queso dip to taste and serve.

- 3 ingredient cottage cheese queso: Make this a vegetarian queso by blending cottage cheese with taco seasoning then adding the mixture to a microwave-safe bowl with the shredded cheese and microwaving in increments until smooth.

- ½ pound lean ground beef
- ½ cup chopped onion
- 4.5 ounces diced green chiles (1can)
- ½ teaspoon garlic powder
- 2 cups cottage cheese
- 1 cup Mexican cheese blend
- 2 Tablespoons taco seasoning
- ½ cup water
- salt and pepper , to taste
For Serving: chopped cilantro, tortilla chips, chopped veggies
Instructions
- Cook: In a skillet over medium heat, cook 1/2pound ground beef, 1/2 cup chopped onion, and one can green chiles. Cook and stir until browned. Drain any grease and add 2 Tablespoons taco seasoning and 1/2 teaspoon garlic powder, and season with salt and pepper.
- Blend: In a blender, combine 2 cups cottage cheese, 1 cup shredded cheese blend, and 1/2 cup water. Blend on high until smooth, scraping down the sides if needed.
- Cook: Pour the cheese mixture in a microwave safe bowl and cook in the microwave for 2-3 minutes, stirring every 30 seconds. It should be creamy and smooth.
- Combine: Add the hamburger mixture to the cheese and mix, adding salt, if needed. Season to taste.
