  • Lean ground beef: This makes the healthy queso dip more filling.
  • Onion: Makes the beef more flavorful.
  • Diced green chiles: Adds some spice and flavor to the beef.
  • Garlic powder: To bring flavor to the meat.
  • Cottage cheese: Full-fat cottage cheese will make the dip more creamy while low fat cottage cheese will make the dip lighter.
  • Mexican cheese blend: You could also use pepper jack cheese or cheddar cheese. Grated cheese from a block will melt better.
  • Taco seasoning: I used my homemade blend but you can use any mix of spices you have on hand.

How to Make Cottage Cheese Queso

In a skillet over medium heat, cook ground beef, chopped onion, and green chiles. Drain any grease and stir in taco seasoning with garlic powder, salt and pepper.

 In a blender or food processor, combine cottage cheese, shredded cheese blend, and water. Blend on high until smooth, scraping down the sides if needed.

Pour cheese mixture into a microwave safe bowl and cook in the microwave for 2-3 minutes, stirring every 30 seconds. Add cooked ground beef to the cottage cheese mixture, combine, then season high protein queso dip to taste and serve.

Recipe Tips

  • 3 ingredient cottage cheese queso: Make this a vegetarian queso by blending cottage cheese with taco seasoning then adding the mixture to a microwave-safe bowl with the shredded cheese and microwaving in increments until smooth.
  • Without the microwave: Combine cheese mixture with hamburger mixture and place in oven safe dish. Bake at 350°F for 5-10 minutes until cheese is melted. If you are a cheese lover, add more cheese on top and and broil a few minutes more.
  • How to serve cottage cheese queso: Serve as a dip with tortilla chips or raw fresh veggies such as bell peppers, carrots and cucumbers. It’s also great as a topping for tacos, nachos or burrito bowls.
  • Garnish: I love to garnish this cottage cheese queso recipe with fresh cilantro, green onions or diced tomatoes.
  • Store leftovers: Store leftover queso dip with cottage cheese in an airtight container in the refrigerator for up to 3 days. Reheat in microwave adding a splash of milk as needed to bring it back to desired consistency.

Ingredients 

  • ½ pound lean ground beef
  • ½ cup chopped onion
  • 4.5 ounces diced green chiles (1can)
  • ½ teaspoon garlic powder
  • 2 cups cottage cheese
  • 1 cup Mexican cheese blend
  • 2 Tablespoons taco seasoning
  • ½ cup water
  • salt and pepper , to taste

For Serving: chopped cilantro, tortilla chips, chopped veggies

Instructions

  • Cook: In a skillet over medium heat, cook 1/2pound ground beef, 1/2 cup chopped onion, and one can green chiles. Cook and stir until browned. Drain any grease and add 2 Tablespoons taco seasoning and 1/2 teaspoon garlic powder, and season with salt and pepper.
  • Blend: In a blender, combine 2 cups cottage cheese, 1 cup shredded cheese blend, and 1/2 cup water. Blend on high until smooth, scraping down the sides if needed.
  • Cook: Pour the cheese mixture in a microwave safe bowl and cook in the microwave for 2-3 minutes, stirring every 30 seconds. It should be creamy and smooth.
  • Combine: Add the hamburger mixture to the cheese and mix, adding salt, if needed. Season to taste.
  • Serve immediately with your favorite tortilla chips or chopped veggies.

Notes

Vegetarian option: You can also serve this as a cold dip, and leave out the hamburger. It tastes good with raw veggies. 
Storage: This dip is served best immediately, however you can store it in an air tight container in the refrigerator for 3 days.  This may change the consistency when reheating.
