Cookies and Cream Bars
These Oreo cookie bars are soft, gooey, and filled with crushed Oreos and white chocolate chips in every bite. They reminded me of my favorite cookies and cream cookies but in a chocolate chip cookie bar form that’s easier to make in one pan!
I love Oreo inspired treats like these cookies and cream bars or these easy Oreo brownies. After baking these Oreo bars on Sunday, we added a scoop of vanilla ice cream and it was the best dessert!

- Butter: I used unsalted butter. It will need to be melted and cooled slightly.
- Brown sugar: Light brown sugar gives a soft texture and sweet flavor to the cookie bars.
- Egg: Sit out your large egg ahead of time to reach room temperature.
- Vanilla extract: Just a splash adds the flavor you need to blend together.
- Flour: Measure your flour mixture using the spoon and level method.
- Baking powder: This will help lift and thicken the Oreo cookie bars recipe.
- Salt: Fine sea salt gives it that sweet and salty flavor.
- OREO cookies: Oreo cookie pieces are chopped up by hand or with a food processor.
- Chocolate chips: Chocolate chips or white chocolate chips give these Oreo cookie bars an added chocolate boost! You do a combo or even add mini M&Ms.
How to Make Oreo Cookie Bars
- Combine. Whisk the butter and sugar in a large bowl. Add in eggs and vanilla and stir until combined.
- Mix together. Add the flour, baking powder and salt. Mix until combined and then fold in OREOs.
- Bake. Press dough into the prepared pan lined with parchment paper. Add flour to your hands. Sprinkle some chocolate chips on top if desired. Place in oven and bake for 25 minutes or until a toothpick comes clean.
- Slice and serve. Allow Oreo bars to cool on a wire rack and then slice into 12 bars.
Tips for the Best Oreo Bars
- Line your pan. The last thing you want is for the bars to stick to the bottom of the pan. Lining your pan with parchment or foil is an easy way to make sure this doesn’t happen. I like to leave about 1 inch of overhang for easier removal.
- Extras on top. Before the bars go in the oven, I like to add more Oreo crumbs and chocolate chips on top of the cookie dough. This not only makes them look prettier but adds more flavor and texture.
- Don’t overbake. Remove the bars from the oven when the top is just barely golden brown. They might look a little soft at first, but they’ll set as they cool. Overbaking will cause the bars to dry out.
- Add a glaze: A cream cheese glaze or powdered sugar icing on top is a great way to add more sweetness.
- Use any Oreo flavor: Double stuff, mint Oreo cookies, peanut butter Oreo cookies confetti cake or ultimate chocolate are just a few varieties that would taste delicious!
- Double for a crowd. If doubling for a crowd, use a larger 9×13″ baking pan. You may need to bake for a few minutes longer if the bars are a little more thick. Use a toothpick to test if the center is done before removing it.
- Don’t slice the bars until cool. If you try to slice the bars while they are still warm, it will turn into a gooey mess. They need to cool completely in order for the center to set and become firm. Then you can slice it into squares!
Storage
- Store: After the Oreo bars have cooled, they will stay fresh for up to 3 days at room temperature if stored in an airtight container.
- Freeze: Freeze bars for up to 3 months. Wrap individually in foil, then transfer to a freezer bag or container and store in the freezer. When ready to enjoy, unwrap and let thaw at room temperature on the counter for about an hour or so before serving.

- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon fine sea salt
- 15 OREO cookies , chopped
- Chocolate or white chocolate chips , optional
Instructions
- Preheat the oven to 325°F. Line an 8×8" pan with parchment paper or foil.
- Whisk 1/2 cup melted butter and 1 cup brown sugar in a large bowl. Add in one large egg and 2 teaspoons vanilla and stir until combined.
- Add 1 cup flour, 1/2 teaspoon baking powder and 1/2 teaspoon salt. Mix until combined and then fold in 15 chopped OREOs.
- Press dough into the pan with hands. Sprinkle some chocolate chips on top if desired. Place in oven and bake for 25 minutes or until a toothpick comes clean.
- Allow bars to cool and then slice into 12 bars.

Made these and they are just decadent! I think I would cut back on the 2cups of brown sugar. One cup would be lots IMO. The Oreos add sweetness and so does the chocolate chips. Still, great recipe. Easy too.
Hello, these are great! I’ve made them a few times and the bottoms are always mushy, like oily looking. I cook them for the max time and tooth pick check. I’m just not sure if I’m doing something wrong?
When the crust cools, does it look okay? Sometimes when it’s fresh out of the oven it doesn’t look done, but is. :)

I made these cookies and thought they were incredibly, surprisingly bland! Ended up giving them away/throwing them out. There was no distinct flavor ….. just over-the-top sweet. On a scale of 0 to 10 (with 10 being the highest) these get a 2.

Yes, I used light brown sugar. I have never tried that substitute before, but I think it would change the texture and flavor.

Hello, I just made these and although the recipe worked very well, the taste did not. It was just bland. I see there is no white sugar and I am very dissapointed because they would of came out amazing if they had white sugar.

My college cafeteria used to make something like these. They only had them about every other week. Since they were “rare” I ate 3-4 at a time. I still frequent alumni events catered by the same people and always squeal if they have these. I plan on trying these as soon as Oreos make it to my kitchen! :) I think the brown sugar will make them super yummy!
