Gooey Oreo Bars
I have quite the treat for you today! Chocolate chip Oreo bars. We were doing our usual Sunday baking this past week and planned to make congo bars or this brookie recipe, but after sifting through the pantry, to my surprise, we only had half a cup of chocolate chips. WHAT?!
Well, I looked around some more and I was able to round up some Oreos and white chocolate chips and decided I would give it a go. It was the perfect combo. These Oreo bars turned out amazing!
They are soft, gooey, and filled with crushed Oreos and chocolate chips in every bite. They reminded me of my favorite cookies and cream cookies or white chocolate Oreos but in bar form. We topped these bad boys with a scoop of vanilla ice cream and we were all in heaven. Love Sundays so much!

Tips for the Best Oreo Bars
These tips are perfect and super helpful to make these Oreo bars perfect! Measuring your flour, using the correct type of butter, and making sure not to overbake are all great ways to make the best Oreo bars. Follow these tips for the best results!
- Line your pan. The last thing you want is for the bars to stick to the bottom of the pan. Lining your pan with parchment or foil is an easy way to make sure this doesn’t happen. I like to leave about 1 inch of overhang for easier removal.
- Unsalted butter. Using unsalted butter is a great way to control the amount of salt used in this recipe. Each brand of butter adds a different amount of salt to their butter, which could result in saltier baked goods depending on the type you use. To minimize any discrepancy, I use unsalted butter and then add 1/2 teaspoon fine sea salt.
- Measure the flour. Use the spoon and level technique to measure the flour accurately so that the bars aren’t too dense or dry.
- Extras on top. Before the bars go in the oven, I like to add more Oreo crumbs and chocolate chips on top of the cookie dough. This not only makes them look prettier but adds more flavor and texture.
- Don’t overbake. Remove the bars from the oven when the top is just barely golden brown. They might look a little soft at first, but they’ll set as they cool. Overbaking will cause the bars to dry out.
Let Them Cool
As tempting as it may be to dig in as soon as you pull them from the oven, don’t slice the bars immediately. If you try to slice the bars while they are still warm, it will turn into a gooey mess. They need to cool completely in order for the center to set and become firm. Then you can slice it into squares!
Variations
These Oreo cookie bars are easy to customize, so feel free to make them your own. You can use a mix of white + semi-sweet chocolate, or swap both for M&M’s instead. This recipe would also work with any variety of Oreo’s. Double stuff, mint, confetti cake or ultimate chocolate are just a few varieties that would taste delicious!
A cream cheese glaze or powdered sugar icing on top is a great way to add more sweetness. Or a drizzle of melted chocolate or chocolate ganache would make them even more decadent!
Recipe FAQs
Once the tops are just barely golden, it’s time to take the bars out of the oven. You can use a toothpick in the center of the bars to make sure it comes out clean. If there is still batter on the toothpick, bake for a few more minutes and try again. Just make sure not to overbake, so they stay soft and chewy.
Yes! What makes these Oreo cookie bars so delicious is the soft and gooey center. That’s why it’s important to remove the bars from the oven while the center is still soft (but cooked through) and the tops are lightly golden. It might look like the centers are undercooked, but they will set as they cool, resulting in a perfectly gooey texture.
Sure! If doubling for a crowd, use a larger 9×13″ baking pan. You may need to bake for a few minutes longer if the bars are a little more thick. Use a toothpick to test if the center is done before removing it.
5 star review
“These were so delicious! I took them to a party, and everyone loved them. I doubled the recipe, so it took quite a bit longer to bake.”

How to Store Oreo Cookie Bars
After the Oreo bars have cooled, they will stay fresh for up to 3 days at room temperature if stored in an airtight container.
You can also freeze these bars for up to 3 months. Wrap individually in foil, then transfer to a freezer bag or container and store in the freezer. When ready to enjoy, unwrap and let thaw at room temperature on the counter for about an hour or so before serving.

Made these and they are just decadent! I think I would cut back on the 2cups of brown sugar. One cup would be lots IMO. The Oreos add sweetness and so does the chocolate chips. Still, great recipe. Easy too.
Hello, these are great! I’ve made them a few times and the bottoms are always mushy, like oily looking. I cook them for the max time and tooth pick check. I’m just not sure if I’m doing something wrong?
When the crust cools, does it look okay? Sometimes when it’s fresh out of the oven it doesn’t look done, but is. :)
Looks good *say in creepy and cool voice
I made these cookies and thought they were incredibly, surprisingly bland! Ended up giving them away/throwing them out. There was no distinct flavor ….. just over-the-top sweet. On a scale of 0 to 10 (with 10 being the highest) these get a 2.
Looks delicious thanx for sharing this recipe< but I have a question, did you use light brown sugar???? and can I substitute it with light muscovado?
Yes, I used light brown sugar. I have never tried that substitute before, but I think it would change the texture and flavor.
I’ve never made something where I line the pan with foil…I’m
Scared I’m going to ruin it and it will stick. Can I just use a disposable foil pan or something?
Hi Jasmine! You don’t have to line the pan with foil, it just makes it easier to pop them out of the pan and a really quick clean up! :)
Will it be ok to use a 13×9 glass baking dish ?
Yes, you can definitely use a 13×9 glass baking dish! :)
Can I bake this in a glass baking dish? Thanks.
Hello, I just made these and although the recipe worked very well, the taste did not. It was just bland. I see there is no white sugar and I am very dissapointed because they would of came out amazing if they had white sugar.
Hi Betty! I’m sorry these didn’t turn out how you expected Betty! These are a twist on my Congo Bars recipe and don’t have sugar, but they have always come out with a lot of flavor just like chocolate chip cookies. I am wondering if an ingredient was missing maybe? I’m sorry again!
How many does this make
It makes a 9×13 pan…the number of cookie bars depends on how big you cut them! :)
Awwww yissssss!
about how many cups of crushed oreo, i only have mini ones in hand
I’m not sure how many cups, but I would use about 40-50 mini oreos! :)
oooh these sound delicious
My family LOVES them! Thanks for stopping by Marissa! :)
These sound yummy!!
Oh my! These sound delicious! and the ice cream and hot fudge looks amazing!
These look DELISH!!! :D
My college cafeteria used to make something like these. They only had them about every other week. Since they were “rare” I ate 3-4 at a time. I still frequent alumni events catered by the same people and always squeal if they have these. I plan on trying these as soon as Oreos make it to my kitchen! :) I think the brown sugar will make them super yummy!
I love finding recipes to the treats I’ve always loved! I hope they taste similar to your cafeterias recipe so you can make them whenever you want! :)
Oh my goodness those look SO GOOD!!! My stomach is growling just looking at them. Pinned!
