Marshmallow Caramel Popcorn
If you’re a fan of my microwave caramel corn and caramel candy, you’re going to love this gooey marshmallow popcorn version even more. I normally just add popcorn seasoning to my favorite salty popcorn, but my grandma gave me this recipe and after one bite, I was hooked.
The marshmallow mixture almost reminds me of Rice Krispie treats, but the brown sugar takes it over the top. It’s seriously so addicting!
This marshmallow caramel corn makes an easy no-bake dessert to whip up in a pinch and is a great recipe to make with your little ones. Try it with homemade marshmallow fluff for something even more decadent!
It’s so easy throw together and requires only 4 ingredients. In just 15 minutes from start to finish, you’ll have an amazing dessert that your family can’t get enough of!
Tips + Variations
- Popcorn: To make it easier, I bought a bag of pre-popped popcorn (Skinny Pop is my favorite). You can also make your own stovetop popcorn or cook microwave popcorn if preferred.
- Extras: Once you spread the marshmallow popcorn out on a piece of wax paper, feel free to sprinkle any favorite candies on top. We like to add mini M&M’s, mini chocolate chips or some colorful sprinkles. You can even turn this into s’mores popcorn by adding Golden Grahams and chocolate chips!
- Gifting: This popcorn would be fun served in little cups or packaged up in clear bags. They would make great party favors, neighbor gifts or just a fun mini dessert to serve at your next dinner party.
Storing Marshmallow Popcorn
This is one of those recipes that tastes best served the first day so that the marshmallow caramel mixture on the popcorn doesn’t get stale or lose it’s flavor and texture. Leftovers will keep in an airtight container or bag for about 2 days, although I recommend enjoying it the day it’s made if possible!

Ingredients
- 13 to 16 cups popcorn , lightly salted (I just used skinny pop to make it easier)
- 1 cup butter
- 16 ounce mini marshmallows
- ¾ cup light brown sugar , packed
Optional: 1/2 tsp vanilla, flake sea salt, 1/2 cup mini M&M's
Instructions
- Add popcorn to bowl. Pour 13-16 cups popped popcorn into a large bowl.
- Melt butter and marshmallows. Melt 1 cup butter and 16 ounce mini marshmallows in a large pan over medium-low heat.
- Add brown sugar then coat popcorn. Once the butter is melted, stir in 3/4 cup brown sugar until it is dissolved (only about 1 minute). Then remove from heat and add 1/2 teaspoon vanilla if desired. Let sit a minute and then pour over the bowl of popcorn. Stir until the popcorn is completely coated. Add more popcorn until desired texture is reached.
- Spread on wax paper. Then spread out onto wax paper and sprinkle with salt or M&M's if desired.

Hi Jamielyn. I have been making the below marshmallow popcorn for 23 years. 1 tin condenced milk, 1 packet normal sized marshmallows (or you can use the mini if preferred) 12 – 14 cups of popped corn. Melt condenced milk & marshmallows, stir regularly until completely melted. Pour over popcorn & mix well. Let it cool & enjoy. I am certainly going to give your recipe a try. Blessings.
I halved the recipe, microwaved the butter until it melted, then added the marshmallows, checking and stirring about every 20-25 seconds until it got completely melted. Also, I treated this like rice krispie treats. I buttered a 9×13, put the popcorn in it, then added the microwaved marshmallow/butter, brown sugar mix when done. Letting it set up right now! Looks awesome!
An this be made without the sugar?
I would not omit the sugar.

Do you use 1 and a half bags of mini marshmallows or just one of the 10oz bags?
You will want to have 16 ounces of mini marshmallows to cover all the popcorn. You can use one full bag and a little over half on another bag. Hope that helps! Enjoy your marshmallow popcorn!
Can I use coconut oil instead of butter?
Never tried, not sure it would hold up the same way. I would start with less or do half and half. Let me know if you test it out!
I made your basic recipe & added bourbon vanilla, crushed Bare cinnamon apple chips, walnuts & a little more cinnamon. Very tasty. I had some of the marshmallow mixture left so I made a small batch of rice krispy treats, just as good.

Absolutely delicious! I spread the popcorn over two baking sheets covered in parchment paper and poured the marshmallow mixture over. Added some chocolate chips to one of the pans, too. Yum!!

I’ve tired marshmallow crème and it works great! It just gives it more or if a marshmallow taste so I add a few more cups of popcorn or do a 1.5 batch of popcorn everything else the same. I think the marshmallow creme goes farther :)
