Chocolate Mint Cookie Recipe
When I think of festive holiday flavors, I instantly think of baked goods with mint. If you love the chocolate and mint combo, you are going to LOVE these easy cake mix chocolate.
I love baking Christmas cookies! This chocolate mint cookie recipe is an easy cake mix recipe, which makes them super soft and chewy in the center with crisp edges. If you’ve never tried cookies from cake mix before, you will be instantly hooked!

Ingredient Notes
- Butter: Softened butter adds rich taste
- Cream cheese: The addition of cream cheese makes these cookies so soft and tender.
- Egg: One large egg at room temperature.
- Peppermint extract: Pure peppermint extract not mint extract.
- Devil’s Food cake mix: Any brand of devil’s food cake mix works.
- Mint chips: I love the Guittard green mint chips but any mint baking chip will work from Andes creme de menthe chips or Walmart mint fudge flavored cihps.
How to Make Cake Mix Chocolate Mint Cookies
In a large bowl, cream the butter and cream cheese until smooth. Mix in the egg and mint extract and stir until combined. Add cake mix and stir until smooth. Fold in the mint chips then refrigerate the cookie dough for 20 minutes.
Once chilled, roll the dough into 1 1/2 inch balls. Press extra mint chips on top and place on a lined baking sheet about 2 inches apart.
Bake in oven at 350°F for 11-13 minutes. Allow to cool on pan for a few minutes and then remove to cooling rack. The centers will harden as they cool. You want them to be fudgy and soft!
Tips and Variations
- The dough can be a bit sticky, so it helps to let it chill in the fridge for at least 20 minutes before rolling. It makes the dough easier to work with.
- Add a few extra mint chips to the tops of the cookie dough balls before baking. It makes them extra pretty and adds more mint flavor. You can also press a few into the tops of the cookies as soon as they come out of the oven.
- Customize these chocolate mint cookies. Instead of mint chips, you can use mint M&M’s or make Andes mint cookies if preferred. You could also do half chocolate chips and half mint chips.
- You definitely don’t want to over bake these cookies. They should be set in the center, but not brown. Cake mix cookies are known for their soft texture, and this version is no exception!
- Let them cool on the pan for a few minutes after removing from the oven. This helps the center set a little bit more without browning the cookies too much. Then transfer them to a wire rack to cool.
Storing and Freezing
- Store: These cookies will stay fresh in a covered container for up to 3 days.
- Freeze: Place the cookies on a baking sheet and flash freeze until hard, about 30 minutes. Then store in a freezer bag for up to 3 months. When ready to enjoy, thaw at room temperature for about 2 hours beforehand.

A friend brought me these cookies last year and I can’t wait to make these for several holiday parties coming up! I would like to make them about a week in advance–have you ever frozen these?
I haven’t tried freezing them, but I would recommend freezing the same day as baking. Or you could freeze the dough in balls and then roll in sugar before baking!
I just found you on Pinterest yesterday and was excited to see this recipe. It’s wonderful so thanks! I made these last night for a church event today because my 13 yr old and 8 yr old kids love chocolate mint cookies. We also took some to a football party & gave a few to the neighbors. Everyone loved them and my neighbor asked for the recipe. They were still soft today which is often not the case with homemade cookies. The only change I did was put some plain M&M’s on top with 1 mint M&M. It seemed almost too minty for me because I’m a chocoholic so next time I would cut down the extract or substitute mostly crushed plain M&M’s. Thanks again!
