Easy Weeknight Taco Pie

You can’t go wrong with this simple and delicious taco pie. Made with a premade pie crust, layers of refried beans and cheese, and then beefy taco meat, salsa, and sour cream.

My boys love this easy-to-make taco pie. With just a few minutes and some basic ingredients, you can spice up your taco Tuesday ideas.

  • Pie crust: You can use a store-bought premade crust if you’d like or use my easy pie crust recipe.
  • Ground beef: Any ground beef will do. Just remember, the fattier it is, the more grease you’ll need to drain so your crust doesn’t become soggy.
  • Taco seasoning: I have a really great homemade taco seasoning blend I keep on hand. If you have packet taco seasoning you want to throw in there, you can.
  • Salsa, sour cream, and cheddar cheese: Your favorite jar of salsa, whether mild, medium, or hot. If you like fresh salsa, I recommend making a batch of my restaurant style salsa. Freshly grated cheddar cheese, and use any kind of sour cream.
  • Refried beans: Adding a layer between the crust and the meat mixture helps to create a barrier preventing a soggy crust, and is also just delicious! If you have extra time to make refried beans from scratch, you should!

Taco Toppings

Whatever your favorite taco toppings that you usually use, you can also add them on top of your Mexican pie. Things like sour cream, salsa, diced tomatoes, shredded lettuce, cilantro, more sour cream, jalapenos, avocado, black olives, green onions or your favorite!

How to Make Taco Pie

Cook the ground beef in a skillet until no longer pink and cooked through. Add the taco seasoning and salsa, then stir in the sour cream. Salt and pepper to taste.

To the prepared crust, add a layer of refried beans. Then, sprinkle half of the cheese over the beans and pour in the beef mixture on top. Finish with a top layer of cheese.

Bake in a preheated 400°F oven for 12-15 minutes until the cheese has melted and the crust is golden. Remove and rest for 5 minutes before slicing. Serve with toppings!

Tips and Variations

  • Make this taco pie casserole with diced chicken instead of ground beef.
  • You can use refried beans made with black beans, if preferred.
  • If you’ve got chili powder, ground cumin, salt, black pepper, garlic powder, onion powder, paprika, and oregano, you can make a homemade blend.
  • Toss in some corn kernels for a pop of juicy, sweet corn in every bite.

Ingredients 

  • 1 9 inch pie crust , can use premade
  • 1 pound ground beef
  • 1 Tablespoon taco seasoning , or more to taste
  • cup salsa
  • cup sour cream
  • ½ cup refried beans
  • 1 cup shredded cheddar cheese , divided
  • salt and pepper , to taste

Desired toppings – shredded lettuce, diced tomatoes, sour cream, cilantro

Instructions

  • Preheat oven and prepare crust: Preheat oven to 400°F. Place pie crust into a 9-inch pie dish and poke a few holes in the bottom of the crust with a fork. Bake 7-10 minutes.
  • Cook ground beef: Meanwhile, brown 1 lb ground beef in a skillet until cooked all the way through. Drain. Add 1 Tablespoon taco seasoning and 1/3 cup salsa. Mix in 1/3 cup sour cream. Add salt and pepper to taste.
  • Add: Spread 1/2 cup refried beans onto the bottom of the crust. Then sprinkle 1/4 cup cheese on top. Add beef on top. Top with remaining cheddar cheese.
  • Bake: Bake for 12-15 minutes, until the cheese is melted and the crust is golden. Allow to sit for 5 minutes before slicing.
  • Serve: Add desired taco toppings on top.

Notes

Variation:
  • You could also make this recipe with chicken. Dice the chicken into 1-inch cubes and cook in place of the hamburger.
  • Add a layer of refried beans to the crust before the meat mixture.
Storage: Leftovers will keep in an airtight storage in the the refrigerator up to 3 days.

You can freeze this pie for up to 3 months. Wrap it in plastic wrap and aluminum foil to seal it to prevent freezer burn. Then, transfer it to a freezer bag and keep it frozen for up to 3 months.
