- Proof the yeast. In the bowl of a stand mixer fitted with a bread hook (or dough hook), add the butter and hot milk. Allow butter to melt and then add honey and warm water. When the temperature is about 105°F add the yeast and let it sit for about 5 minutes or until it foams up.
- Add remaining dough ingredients. Start with just 2 cups of flour and mix to combine. Then, add 1/2 cup flour at a time. Continue to mix on medium speed until the dough is no longer sticking to the sides, about 3-5 minutes.
- Cover the bowl and let the dough rise. When kept in a warm place, free from any draft, it should be about 1 hour until it doubles in size.
- Roll the dough. When the dough has risen, punch it down and transfer it to a clean, lightly floured surface. Use a rolling pin to roll the dough into a large rectangle about 13 x 9 inches and 1/2 inch thick.
- Cut into 20 squares. Use a sharp knife or pizza cutter for this. Place them on a 15 x 10 baking sheet. Cover with plastic wrap or kitchen towel and let rise another hour, or until they’ve puffed up.
- Bake until golden. Bake in preheated 350°F oven for 12-15 minutes, or until golden brown and the center is cooked through.
- Brush the tops. Immediately brush with the melted butter while the rolls are still warm.

- ⅔ cup warm water , about 105°F
- 1 Tablespoon active dry yeast
- 2 teaspoons salt
- 1 large egg
- 5-6 cups all-purpose or bread flour , use the extra cup as needed

- ½ cup salted butter
- ¼ cup honey
- ½ teaspoon cinnamon , more to taste
Instructions

You’ll know it’s ready when your fingers no longer stick to the dough but it's still soft. Knead on medium speed 3-5 minutes.
- Cover the bowl and let rise 1 hour, or until it doubles in size.

Was worried at first that they didn’t rise all the way on the 2nd rise, but then I recalled that Texas Roadhouse rolls are a bit flatter. My mother in law was over for dinner, also agreed that when she had made a similar roll once years ago they looked about the same and still baked up fluffy.
