Substitutions and Variations

  • Flavored custard: Replace brown sugar with honey and add some orange zest for a light citrus taste in the simple egg custard!
  • Milk: I recommended using whole milk or heavy cream as it makes for a richer custard that adheres to the bread better.
  • Spices: Replace the cinnamon with pumpkin pie spice, cardamom, nutmeg, cloves, or whatever else you might like.
  • Bread: I love to use day old homemade brioche bread, but usually I purchase a loaf at Trader Joe’s. You can also use challah bread, French bread, Texas toast or sourdough bread.
  • Garnish: Make any morning special by serving brioche bread French toast with powdered sugar, fresh berries or banana slices, pecans and homemade maple syrup.

How to Make Brioche French Toast

  • Make egg custard: In the base of a blender or in a bowl, pulse or whisk the milk, flour, eggs, brown sugar, vanilla, cinnamon, and salt until smooth.
  • Dip bread: Dip slices of brioche bread into the egg mixture and flip with a fork to evenly coat.
  • Pan-fry brioche: Place dipped slices on a buttered preheated griddle and cook 2 minutes per side. Whisk the egg mixture to keep combined and repeat as needed.
  • Enjoy: Serve immediately topped with your favorite toppings.

FAQs

Why is my brioche French toast soggy?

While it’s hard to know exactly, there could be a few reasons! If you added too much milk to the custard mixture, it may turn out soggy or if your heat was too high the outside of the bread will be cooked but the inside too soft.

Do I need to dry my bread?

While it’s not the end of the world if you use fresh bread, using day old or stale bread does help soak up the custard better without making the French toast soggy.

How to prevent French toast from burning?

Adjust the temperature of the stove as needed. As you continue to make the French toast the skillet may start getting hotter and you may need to turn down the temperature but then raise it again after it heats back up.

Make Ahead and Storage Instructions

Make ahead: For an overnight brioche French toast recipe you will need to use bread that is a few days old. Or simply just make the batter, cover and refrigerate overnight. Then cook on buttered skillet the next day.

Store: Store leftover brioche french toast in the refrigerator in an airtight container for up to 3 days. You can also freeze it for up to 2 months. To freeze, wrap individual slices in plastic wrap and store in a freezer safe bag.

Reheat: For best results reheat in a toaster oven or in a skillet or griddle. For softer French toast, reheat in the microwave.

Ingredients 

  • 1 cup milk
  • ¼ cup all-purpose flour
  • 4 large eggs
  • 3 Tablespoons light brown sugar
  • 1 ½ teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • teaspoon Kosher salt
  • 1 Tablespoon unsalted butter , for greasing the griddle
  • 12 slices brioche bread

Optional Toppings: Berries, Fresh fruit, Powdered sugar, Nutella, Whipped cream, Jam, Syrup

Instructions

  • In the base of a blender, pulse the milk, flour, eggs, brown sugar, vanilla, cinnamon, and salt until smooth. Alternatively, whisk in a bowl until smooth. Transfer to a shallow bowl.
  • Preheat a griddle to 350°F or a skillet over medium-high heat. Grease with butter. Dip the brioche into the egg mixture and flip with a fork to evenly coat. Place on the griddle and cook 2 minutes per side, or until lightly golden brown. Whisk the egg mixture to keep combined, as needed. Repeat with remaining brioche.
  • Serve immediately and top with your favorite toppings.

Notes

Keeping warm: Place on a baking sheet in the oven at 175°F to keep cooked French toast warm.
Soaking overnight: If soaking the brioche overnight, it’s best to use bread that’s a few days old. Place the stale brioche in a large dish, then pour egg mixture evenly on top. Cover and refrigerate overnight. Then cook on buttered skillet the next day.
