No-Bake Oatmeal Peanut Butter Cookies
These no-bake peanut butter oatmeal cookies are so easy to make and only take 10 minutes to prep. They are a classic cookie that is chewy and full of peanut butter flavor.
These no bake peanut butter oatmeal cookies were a big hit with my family and were gone so fast! Next time I am going to double the batch and stick half in the freezer so that we’re always stocked. Just like my peanut butter m&m cookies, haystacks recipe and no bake peanut butter bars they are the perfect grab-and-go sweet treat.
Recipe Ingredients
The best thing about these no-bake peanut butter cookies are that the ingredients are so simple. You most likely already have these pantry staples!
- Peanut butter: The creamy type works best.
- Quick-cooking oats: Make sure to use quick 1-minute oats. Old fashioned rolled oats won’t work in this recipe because they’ll be hard and crunchy.
- Sugar: Granulated sugar gives the cookies the perfect amount of sweetness.
- Butter: This butter adds a delicious, rich flavor.
- Milk: I typically use whole milk.
- Vanilla: Adding a dash of vanilla takes the flavor up a notch.
How to Make No-Bake Peanut Butter Oatmeal Cookies
- Prep. Line two baking sheets with parchment paper or wax paper and set aside.
- Boil. In a saucepan over medium heat, combine sugar, butter and milk and bring to a boil. Boil mixture for 2 minutes, constantly stirring.
- Mix. Remove pan from heat and mix in peanut butter and vanilla. Then add instant oats and mix until well coated.
- Set. Drop batter by the spoonful onto the prepared baking sheet. Let cool until set, about 30 minutes.
Tips and Variations
- Add a drizzle of melted chocolate on top.
- Top with a chocolate kiss, similar to peanut butter blossoms. Once you drop a spoonful of the batter on your baking sheet, just press the chocolate kiss into the cookie immediately. You could also add some chocolate chips.
- After you mix in the oats, fold in 1/2-1 cup Reese’s pieces candy.
- If your cookies aren’t setting, you did not boil the ingredients long enough. A candy thermometer or instant read thermometer should ready 230°F.
- I like to use a cookie scoop to place the peanut butter no bake cookies on the baking sheet. It keeps them uniform in size.
Storing and Freezing
- To store: These no-bake peanut butter oatmeal cookies can be stored at room temperature in an airtight container or bag for 3-4 days. However I personally like to store them in the refrigerator, because it hardens the texture a little and makes them extra chewy. If stored in the fridge, they’ll last up to a week.
- To freeze: Store in an airtight container or bag in the freezer for up to 3 months. If you’re planning on freezing the whole batch, make sure you let the cookies set first before adding them to the container or else they’ll stick together.

- ½ cup butter
- ½ cup milk
- ¾ cup creamy peanut butter
- 1 teaspoon vanilla extract
- 2 ½ cups quick oats

Quick, easy, and not overly sweet like some no bakes. Great for a hot summer day when you don’t want to turn on the oven.

1.5c of sugar sounded like too much and I’m glad I used 1c. Because that was plenty sweet enough too. So unless your can handle super sweet, I wouldn’t suggest that much. I may even try 3/4c. Next time. That may require me to scale back the amount of corresponding butter and milk just a little. I found these to be quite sticky, even after 24 hrs in the fridge so they are wrapped individually in wax paper as singles. The flavor is good and the vanilla at the end is critical. I also think you could add a bit roll oats than what is listed so have more on hand in case.
Try boiling the mixture longer about 3 min before adding the peanut butter/vanilla and oats the longer you boil the drier they are.
I too am a huge fan of No Bake Chocolate cookies so I am really excited to try this version asap!! The drizzle of chocolate is what really puts this over the top in my books!
